Recipe of the Month: Easy Red Beans and Rice

Red beans and rice

Ingredients:
Cooking Spray or Oil
1 large onion, chopped
1 medium green bell pepper, washed, seeded, and chopped
1 tsp garlic powder
2 cans diced tomatoes (14.5 ounces)
1 can kidney beans, drained and rinsed
6 cups cooked brown rice

Preparation:
1. Spray skillet with cooking oil spray.
2. Cook onion and pepper over medium heat for 5 minutes or until tender.
3. Add garlic powder, tomatoes, and kidney beans.
4. Bring mixture to a boil.
5. Reduce heat to low and simmer for 5 minutes.
6. Serve over rice.
Makes 8 Servings

Espanol:

Ingredientes:
Aerosol de cocina o aceite
1 cebolla larga, picada
1 pimiento verde, mediano, lavado, sin semillas, y picado
1 cucharadita de ajo en polvo
2 latas de tomates en cubos (14.5 onzas)
1 lata de frijoles rojos, lavados, y escurridos
6 tazas de arroz moreno/café cocido

Preparación:
1. Rocié el sartén con aceite o aerosol.
2. Cocine la cebolla y el pimiento en juego mediano por 5 minutos o hasta tiernos.
3. Agregue el ajo, los tomates, y los frijoles.
4. Déjelo hervir.
5. Rebaje el fuego a bajo y cocínelo lentamente por 5 minutos.
6. Sírvalo encima del arroz.
Rinde 8 porciones
